I was taught to clean grills to relieve the chefs of that duty when the restaurant’s dedicated grill cleaner was unavailable. This was recognized by my boss and allowed me to work more hours. This allowed the restaurant to work efficiently and reduced the time the chefs spent at each grill by over 30%, allowing them to allocate that time towards prep and get to other tables quicker.

The organization and planning helped keep the group focused on objectives and avoid procrastination. By being able to fill any role, the restaurant was able to call me into work during any callouts or emergency and prevented the team from being understaffed most days. This significantly reduced the chances of being understaffed.
